Food has long been associated with American holidays. Cookouts for July 4th. Turkey (or tofurkey) for Thanksgiving Day.  Why not local and organic food for Earth Day?
National Cooperative Grocers Association (NCGA), a business services cooperative representing 110 food co-ops nationwide, suggests that people celebrate Earth Day by making local and organic foods a part of their day.

Nothing says summer like fresh mozzarella! But I have to admit that it never occurred to me to put it on pizza until recently when we ate at a wonderful Italian restaurant along “The Strip” in downtown Pittsburgh Pennsylvania.
