The Great Greek Salad

I love making different types of salads, but being at college and on a budget, it is hard to get all the ingredients for the salads without spending an arm and a leg. But thanks to Monette’s Market in Toledo, Ohio, I now can make this Greek salad and not feel bad about buying everything for it.

This salad is pretty simple to make and it is delicious. Besides the fact that it is delicious, it is very filling and pretty healthy. It is based on a traditional Greek salad which contains no lettuce. Since there is no lettuce in the salad, you can prepare it and leave it in your fridge for over a week without it getting gross or soggy. I have a batch I made a week and a half ago and it is still delicious.

For this recipe, you will need:

  • 3 roma tomatoes
  • 1 red onion
  • Red peppers
  • 2 cucumbers
  • ½ pound  Katamala Olives
  • ½ block of Feta Cheese
  • Salt and Pepper
  • Olive Oil
  • Lemon

Cut all the ingredients and put in a large salad bowl. Then add the olive oil, spices and lemon juice.  Once it is all together, keep in the fridge at least an hour before serving so the salad is cold. (It will taste better this way).

The serving above will make enough for 6 to 8 people depending on the portion size. You can always make more or less, but the basic idea is simple.
