Easter brunch ideas from Rama Ginde

The following Easter brunch ideas are courtesy of Chef Rama Ginde of Cresskill, New Jersey.
Easter brunch is a great way to celebrate delicious spring produce:
– Use eggs as the main star; eggs cook fast and are the perfect symbol for Easter
–Use seasonal ingredients which have great flavor — like asparagus, mushrooms, and peas (KZ says: What about a frittata?)
–Serve your meat differently by making lamb burgers and laying out a burger bar. Serve different condiments like spicy mayo, caramelized onions, pea-basil pesto and the list goes on. (KZ says: What about mint chutney with lamb burgers?)
–End your brunch with chocolate. Try frozen hot chocolate with fresh whip cream, crushed hazelnuts and a cherry to top it all. (KZ says: I’ll drink to that. You might want to add Bailey’s Irish Creme or Kahlua for the adults.)
