Jennifer
I think that is every host's fear that they will run out of food.
I have seen lots and lots of leftovers but never running out of food. I find with my friends anyway, people don't eat as much as I think they will.

Absolutely, Mary! Making sure the food offerings are balanced along several axes is just as important as making sure there's enough of it. Sounds like I know what next week's "Nibbles" will be about ;-)

Great tips Jennifer. I'd just like to add my two-cents worth about making sure that the food you do offer has options for those health-conscious people. Provide low-calorie alternatives and make sure they are clearly marked so people can make the right choices.

For example, make dips using Greek yogurt instead of sour cream. They will taste nearly the same for a fraction of the calories. Have lots of veggies for grazing and keep sauces on the side.
