A couple of years ago, I got a fun present – it was a kit that included everything I needed to make my own pure vanilla extract.  Somebody made a lot of money on that kit because the truth is, you don’t need a kit at all.  There are only three things you need and here is the recipe.

Pure Vanilla Extract

  • 2 Vanilla Beans
  • Vodka
  • 1 glass bottle with a lid

Put the vanilla beans into the bottle.  Pour the vodka into the bottle to cover the vanilla beans.  Put into the pantry and forget for a couple of months to let the vanilla infuse info the vodka.

    One year a friend of mine was experimenting with vanillas and gave her lucky friends (of which I was one) a trio of vanillas. She made batches each with Rum, Vodka and white Brandy. There are subtle taste differences in each but they are all marks above the store-bought variations.
