Funny you should mention this. I put a slice of cucumber and some mint springs in an icy pitcher of water that stays in my refrigerator all day. 

Last year I was staying with my friend Christine in Los Angeles and she put some cucumber spears in a pitcher of water. It was so refreshing. 

Blanco, a modern Mexican restaurant in Tucson serves a cucumber and kumquat fresco made with white rum. It's so delicious.
