Looking at the recipe, I think fresh spinach. Frozen spinach would get too soggy. 

Try a head of fresh spinach, washed well and rough ends removed. Add a generous handful or two. Spinach has a lot of shrinkage when cooked or steamed. The parchment will have a steaming effect.</description>
