Healthy Holiday Recipe for Sweet Potatoes

As a matter of fact, I cannot eat sweet potatoes when they are prepared like that. I frequently asked the cook to just microwave me a sweet potato.
Sweet potatoes are rich in vitamin A, fiber, calcium, vitamin C, iron, and thiamine. While sweet potatoes have a moist mouth feel, yams have a drier mouth feel.
Here’s a recipe from the magazine Vegetarian Times that shows the sweet potato in a more sophisticated application with caramelization and puff pastry.
