Can I be a judge?

Imagine this — you start with rich Scharffen Berger chocolate and add at least one out-of-the box ingredient such lavender, lemongrass, saffron, sea salt, ginger, cloves, wasabi…there’s a whole list and the usual — cocoanut or peanuts is not on the list.

I have a friend who is already thinking about ingredients. Check out the rules. The prizes are pretty cool too.

    Recently I saw mention of pairing chocolate with ground pepper. This intrigues me and I was curious if anyone has tried this combination.

    I haven’t tried chocolate with ground pepper but in Mexican food, a mole (mo-lay) will often have chile powder with some chocolate.

    There are alot of different peppers not just black pepper and the origin of black pepper doesn’t all come from the same place so the growing regions are different adding new dimensions to pepper which could make it be better paired for chocolate.
