To-Die-For Brownies with Prunes
Published by Coco Carmichael May 27th, 2007 in Comfort Foods, Healthy Lifestyle Choices, Healthy Snacks, Recipes. Here’s a great low-calorie brownie recipe that uses prunes instead of oil. Each brownie counts as 1 fruit and 1/2 fat. You won’t believe how good it is - very moist and rich.
I got this years ago from Jenny Craig. You won’t find this in their online recipe database. But you can here!
Fudgy Brownies
- 2/3 c. (4 oz) pitted prunes
- 3 T water
- non-stick cooking spray
- 4 oz. unsweetened chocolate
- 3 large egg whites
- 1 c sugar
- 1/2 t salt
- 1 1/2 t vanilla
- 1/2 c. flour
Preheat over to 350 degrees.
Combine prunes and water in a food processor or blender. Blend until pureed. Coat an 8-inch square baking pan with non-stick cooking spray. Cut chocolate into 1-inch pieces and place in microwave-proof bowl. Microwave until chocolate is melted. Remove from microwave; set aside.
In mixing bowl combine all ingredients except flour; blend thoroughly. Mix in flour. Spread batter in prepared pan.
Bake about 30 minutes until springy to the touch about 2 inches around edges. Cool on rack. Cut into 24 brownies.

Also to consider.
Maintaining ones health is one of the basic requirements of leading a prosperous life. One must take a lot of care in what one eats as is said, “you are what you eat”. Taking a healthy meal which fulfills the body’s requirement of all the vitamins like vitamin e and vitamin d3 is a must in keeping oneself fit and fine. The vitamin d levels can also be obtained from sitting in the sun as the sun rays synthesize vitamin d for human consumption. Several advertisements target health conscious people through showing vitamin water commercial to direct them towards the vitamin shoppe.
CoCo,
I just noticed this recipe. It looks great. I will have to try it. I just won’t tell my DH that it’s prunes or he wouldn’t eat it. On the other hand, there would be more for me.
