Chili My Soul - Easy Healthy Dinners for the Family

Nothing warms the tummy as well as the soul than a steaming bowl of chili filled with meat and beans and vegetables.
Here’s one of my favorite quick chili recipes:
1/2 cup chopped onions
3/4 lb. lean ground beef
1 15.25 oz. can corn, drained
1 14.5 oz. can diced tomatoes
2 cups salsa (you decided the spicy quotient)
1 16 oz. can kidney beans, drained
Brown onions and meat. Add remaining ingredients and simmer for 30 minutes. Makes 4 to 6 servings. Top with tortilla chip strips. Serve with a green salad. If there’s any leftovers, serve over hot dogs. (Make a day in advance to allow the flavors to mingle.)
