Fun with pate a choux dough
Fun with pate a choux dough

Circle of Food was invited to a sneak peek event where the chief pastry chef  Kate demonstrated how to make pate a choux (translation: dough of cabbage). This dough is used for eclairs and other pastries filled with custard and ganache.

We budding pastry chefs marveled at the ease in which an exuberant Kate measured and mixed. Then we were invited to use the pastry cone to form our own shapes. As you can see by the photo on the left, Karyn went wild. Then we filled the pastry with custard and drizzled with warm chocolate ganache made with cream and Belgium chocolate chips. Ah, the aroma of chocolate richness. A good time was had by all + I got to meet Carrie & David Francis from Tucson Happenings, people I know through social media.
