Thanksgiving: Turkey Cupcakes

Yes, you read that right. I was having a conversation with a friend about how I lost my taste for turkey and get bored with a whole bird and then this recipe appeared in my inbox.

For a variety of reasons, not everyone wants to cook an entire roasted turkey on Thanksgiving.  Why not think out-of-the box and try this creative and healthy take on turkey from Nueva Cocina.  Who can pass up a cupcake?

Recipe: Nueva Cocina Turkey Picadillo Cupcakes


1 lb. of ground turkey
1 package of Nueva Cocina Picadillo Seasoning
1 teaspoon of olive oil
½ 8-oz can of tomato sauce
1 egg white
2 tablespoons of unseasoned bread crumbs
mashed potatoes of your liking
one 6-cupcake baking tray
cranberries or raisins

Makes 6 cupcakes


Mix the ground turkey (uncooked) with Nueva Cocina® Picadillo seasoning, egg white, bread crumbs, and tomato sauce in a bowl until all ingredients are fully incorporated.

Fully fill each of the six slightly greased cupcake holders in the tray with the mixture.

Bake in a pre-heated 400-degree oven for 15 minutes, loosely covered with aluminum paper. Take off the aluminum paper and continue to bake for another 5 minutes until the top is browned.

Let cool for 5 minutes once out of the oven or until they can be handled with bare hands.  “Frost” with your favorite mashed potatoes and place raisins or cranberries on top for decoration and added flavor.
