Leadership Academy Lunch

Like I said before, I went to Leadership Academy for Alpha Chi Omega this weekend. It was a lot of fun, but also a lot of busy busy work and speakers.

For each meal, we sat in a huge banquet room and enjoyed food together. On Saturday when we sat down for lunch we had no idea what to expect.

First, we were brought out bread and drinks. Then came the soup. I was expecting something simple like chicken noodle, but instead we were all given squash soup. I know it sounds gross and yes it did look gross too, but it actually was really good. I was very surprised, especially since I have never heard of it before. After the soup, we were all given entree Cobb salads. They were delicious. I really thought that was it until they brought out dessert. Yes I know it seems kinda crazy since it was only lunch, but it was amazing! It was a chocolate type pie with strawberries and whipped cream.

I am very impressed with the quality of the food this year for the conference. Last year I went to the same conference for my finance position and the food was nothing like this.. We were given general subs with a bag of chips for lunch.. It really doesn’t compare at all. But I did enjoy it :))

Now from the lunch, I am very interested in preparing Squash soup. I however have no idea how to make a good recipe of this soup. If any of you have ever made it before, please let me know. Thanks
