I love making devilish eggs when my eggs in the fridge are about to go bad. You can make them very easily and it is a great snack! This snack is also a healthier option.

To make this….Cut a hard-boiled egg (see Tip, below) in half. Combine 1 teaspoon low-fat mayonnaise, 1/4 teaspoon whole-grain mustard and a pinch each of salt and pepper and dollop it on the egg. Makes: 1 serving. Per serving: 91 calories. What you get: Protein.

Kitchen tip: To hard-boil eggs, place in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low and cook at the barest simmer for 10 minutes. Remove from heat, pour out hot water and cover the eggs with ice-cold water. Let stand until cool enough to handle before peeling.
