Tucson restaurant news: Gotta love Janos!
Tucson’s most famous chef is trying to open a restaurant downtown and there’s many hiccups along the way. We — his adoring hungry public — will just have to wait a little longer. In the meantime, in all this build-out chaos, Janos is having fun with it all.

Tucson, AZ—-In these economic times, many have learned to be resourceful – none better than Janos Wilder chef/owner of Janos, J BAR and the soon to be DOWNTOWN Kitchen and Cocktails all in Tucson, AZ. At “DOWNTOWN”, located in the heart of downtown Tucson, remodeling construction hit a setback several weeks ago, pushing the original opening date back another month. “Although I had hoped to be open before our busy season hits, things don’t always go the way we plan”, said the philosophical Wilder. “We had been having issues with the health department and things were held up for a while. So instead of being stressed and forcing the issue we got really creative. I kept looking at those saw cuts, trenches and all that dirt in the really ugly kitchen and decided to have some fun before we got permission to cover the plumbing up and in a few hours we created a beautiful garden in the midst of all the wreckage!” (see attached photo)
“DOWNTOWN” is scheduled to open later this month and is sure to be another home run for this talented Chef. Winner of the 2000 James Beard Award for Best Chef Southwest, Wilder’s national acclaim has helped put Tucson on the list as one of the most exciting culinary destinations in the US.
The award winning restaurants Janos and J BAR are located at 3770 E. Sunrise Drive on the grounds of the Westin La Paloma Resort in Tucson, AZ. Winner of the James Beard award for best Southwest Cuisine, Wilder creates exceptional cuisine using the finest local and sustainably produced ingredients available. Janos restaurant features ingredients from the region with French and European influences. J BAR, the more casual sister restaurant features a wide variety of specialties which draw influences from the American Southwest, Mexico, the Caribbean, Central and South America. J BAR serves dinner beginning with Happy Hour at 5:00-6:30pm with the kitchen closing at 9:30pm and Janos serves dinner Monday through Thursday from 5:30 to 9pm, Friday and Saturday from 5:30 to 9:30pm.
