This is a great appetizer recipe my mom taught me how to make.
It is very simple, and a lot healthier than making real fried ones.
All you need is:
-chives (to top)
You first microwave the potatoes until soft for about 10 minutes. Then you cut the potatoes down the middle, and scoop out the insides. (i usually save the insides to make mashed potatoes). Then once the potatoes are just the skins with a little potato left, you bake them for 5 to 10 minutes with a little olive oil to get crispy. After they get a little crispy, take them out of the oven and fill with cheese and bacon bits. Cook for an additional 10 minutes, then take out of oven and garnish with chives.
