Easy Red, White, and Blue Desserts

Every patriotic holiday, people like you are looking for easy red, white, and blue desserts.

Here are some ideas:

Buy a cheesecake and decorate with fresh sliced (drained)strawberries and blueberries and red and blue sprinkles.

You could easily whip up of a batch of magic bars and substitute half the chocolate chips for dried cranberries and tint half the coconut blue using a little bit of milk and blue food coloring.

Healthy layered parfait recipe:

1 3-oz package of berry blue Jello (may use sugar free)

1 cup boiling water and 3/4 cup cold water

1 3-oz package of strawberry Jello

1 cup boiling water and 3/4 cup cold water

2 pints vanilla yogurt

Make one flavor at a time. Dissolve Jello in boiling water. Add cold water and pour into a 8 or 9-inch pan. Chill until firm–at least 3 hours. Using a sharp knife  that has been dipped in warm water, cut into cubes. To remove cubes put a warm cloth under the bottom of the pan. When cubes are slightly loose, remove with spatula. Or put the pan in a quick dip of warm water and invert on wax paper.

In chilled parfait glasses, layer vanilla yogurt, blue cubed jello, yogurt, red cubed jello, yogurt, blue cubed jello, yogurt, red cubed jello. Top with whipped cream or a dollop of yogurt and sprinkles if desired.  

Serves 4 to 6 depending on the size of the parfait glass.
