Memorial Day Recipe: Tuna Burgers

Beyond the Beef

Memorial Day officially kicks off the summer season.  As you prepare for a patriotic feast think beyond the typical greasy grill fare and try a tuna burger.  
Whether celebrating in the city or having a backyard BBQ these tangy tuna burgers are a lighter heart-healthy twist on the traditional burger.

Recipe: Tuna Burgers

1 (6.4-oz.) pouch or 2 (2.6-oz.) pouches StarKist Chunk Light or Albacore Tuna
1 (4-oz.) cup cheddar cheese, shredded
1/2 cup nonfat peppercorn ranch salad dressing
1 Tbsp. olive oil
1-1/2 cups bread crumbs, divided
1 egg, lightly beaten
1/4 cup green onion, sliced
In a medium bowl, combine tuna, 3/4 cup bread crumbs, cheese, egg, salad dressing, and onion. Form six patties; coat each side with remaining 3/4 cup bread crumbs. Heat oil in non-stick skillet over medium heat. Cook patties 3 to 5 minutes on each side until golden brown.

Prep Time: 5 minutes
Cooking Time: 6 to 10 minutes
Serves: 6

Serve on whole wheat buns with baked potato chips (less fat), coleslaw made with light mayo, and blender fresh fruit smoothies or watermelon balls.

  1. hmmm, but tuna is making its way to the endangered species list. And its filled with mercury, bad for pregnant women. What about turkey burgers?
