Recipe: Luscious Roasted Grapes

I made this delicious appetizer to take to a friend’s house for a social gathering. Everyone raved about it and the best part of all — it’s so simple.

Recipe:

3 cups stemmed red seedless grapes (about 1 pound)

1 red onion, thinly sliced

1 tablespoon olive oil

1/2 teaspoon freshly grated orange zest

1 tablespoon balsamic vinegar

Preheat the oven to 375-degrees. Rinse and drain the grapes. Spray nonstick spray on the botton of a 9x13x2 pan. Put the grapes and onions in the pan and drizzle with olive oil.

Bake for 20 minutes. Stir. Turn the heat up to 400-degrees and bake 20 to 25 minutes more until the grapes turn brown and collapse.

Remove from oven. Sprinkle with zest and drizzle with balsamic vinegar. Salt to taste. Mix once again. Makes 1 1/2 cups.

You can serve over softened goat cheese or a slab of cream cheese. Serve with toasted baguette, party rye bread, or crackers.

If you don’t eat cheese, roasted grapes can be a wonderful topping in a grilled almond butter and “jelly” sandwich on nutty whole grain bread.
