Mac and Cheese

I found a very tasty looking recipe online, but it is very unhealthy to make. Here is the recipe.

 1 lb box elbow macaroni
1.5 stick  butter or margarine
  5 cup    sharp cheddar chess shredded (approx 1.5 lbs)
  1 cup    asiago cheese shredded
  2 tsp    coarse ground black pepper
  1 tsp    crushed red pepper flakes
12 oz     evaporated milk (1 12 oz can)
  3        eggs beaten
  1 cup    milk
1/2 cup    bacon bits

To make this healthier, we could make a few alterations.

First, the bacon bits in it are not the best choice. If you like the idea of meat, try low fat chicken or something on the side. Next, in place of regular eggs, just using the egg whites will make it healthier. Since this recipe calls for 3 eggs, you would change it to 4 egg whites. Next, make sure to use fat free milk. It will still mix with the cheese to make it creamy. For the cheese, there is no way getting around all of that, except by getting a lower fat cheese to substitute, ex. low fat cheddar. Last, you do NOT need to use 1.5 sticks of butter. I have made this before and it does make it creamier, but adding water and a little extra milk works just fine and eliminates the need for fatty butter.

I know this is a simple recipe, but with a few changes (listed above), your family can be eating a favorite food without the guilt!

  1. You can use “skim plus” which is skim milk as far as fat is concerned, but thicker because of added milk solids. also, the reduced fat cheeses are good and melt fairly well. you won’t miss any taste in this recipe. You can even try the organic soy spreads instead of butter.
