Easy Red, White, and Blue Recipes

Last minute, I know but here are some easy last minute red, white, and blue recipes.

Recipe: Red, white, and blue dessert (low calorie too)
Nothing could be easier than buying a angel food cake, topping each slice with a scoop of strawberry ice cream or strawberry ice milk or frozen yogurt and topping that with 1/2 cup of fresh blueberries. Top with whipped cream or cool whip if desired.
Recipe: Red, white, and blue ice cream cones (serves 8)
This is easy to do and everyone loves ice cream or vanilla frozen yogurt dotted with real fruit.
Buy 2 quarts of good quality vanilla ice cream. You have to soften it, try defrosting for  2 or 3 minutes in the microwave. remove from packaging and place in a big plastic bowl.

Gently stir in 2 cups of strawberries that have been sliced in half and 1 cup of fresh blueberries. Do not over stir. Pack back into the ice cream package and another container and refreeze.

Serve with ice cream cones or in a dish. Top with small flags. 

Optional: Add a cup of miniature chocolate chips or the chopped nuts of your choice (if people are not allergic to nuts). You could use vanilla frozen yogurt instead of ice cream.

Recipe: Red, white and blue potato salad
Okay, it might not be blue but if you can find purple potatoes, they take on a purple-blue hue.

4                   white or yukon gold potatoes
8                   red potatoes
2 to 3           purple potatoes

Try to get find potatoes as close in size as possible. Do not peel but scrub well. Cut into quarters. In the boiling (dash of salted) water, place the purple potatoes first because they take longer to cook. Then add the other potatoes. Cook until done. Drain.

1                   red bell pepper, diced

For the dressing, forgo the mayo-based and gently toss in a good bottled Italian vinaigrette.

If you’re not going to stick to the red, white, and blue theme then consider adding

1/2 cup of chopped black or green olives
1 cup freshly grated beets or 1 cup canned beet cubes (reddish)

Chill for 1 or 2 hours


3/4 cup grated jack cheese just before serving; toss.
