Lemon Mascarpone Trifle

I know everyone is wanting to eat healthy after the huge 4th of July parties and everything, but this dessert is a must for any party or get together. I first made it with my aunt in March during spring break. This dessert recipe is absoultly amazing and everyone is sure to love it. Here it is…

Recipe: Lemon Mascarpone Trifle

-1/2 cup sugar

-1 lemon, zested and juiced

-16 oz. mascarpone cheese

-1 store bought pound or lemon cake (cut into 1/2 inch thick slices)

-1/2 cup creme de cassis liquor (or similar liquor)

-2 cups strawberries, blueberries or raspberries

-fresh mint leaves for garnish


1. In a small saucepan, combine the sugar with lemon juice. Cook until disolved (about 5 minutes) Let cook.

2. In a medium bowl, combine the cooled sugar mixture with the mascarpone cheese and the lemon zest. Using an electric mixer, whip on medium speed unil it is light and fluffy.

3. Building the cake. Line bottom of trifle bowl with layer of cake. Brush with liquor. Spoon a layer of cheese over cake, then a layer of berries. Repeat layers all the way to the top.

Chill and Serve!

This dessert really is amazing. It only takes about 15 minutes to make, but looks gorgeous and is very tasty. I reccomend this to all of you and hope you take the time to make it. Good Luck!
