Something New Under the Sun

It seems Columbia University in NYC is working on a new way to produce food for the masses – Vertical Farming.

The idea is to build towers in the urban areas that would contain floor after floor of crops. Not only would there be an in-house irrigation system but solar panels would be used for energy, incinerators for waste products and water would be recycled. Totally sustainable!

The food would be organic, shipping would be minimal and production could be ongoing. Some say the towers could also be used “in the county” thereby allowing for less land use and perhaps returning much of the current farmland back to nature.

Of course, it is only an idea at the moment but if vertical farming comes to fruition the way we eat could be changed forever.
