One of the best ways to taste more wine when you’re out to dinner or cocktails is to order a wine flight instead of individual glasses of wine. 

With a wine flight (no need to fasten your seat belt just yet) three to five different samples of a specific varietal allows for comparison.  Samples are usually served in 2 oz. servings.

At Fleming’s Prime Steakhouse & Wine Bar, you can drink flights with dinner or at the bar. You can even take it one step further and ask your server to bring your wine flights “blind” along with wine notes. Take your time tasting the mystery samples and try to figure out which wines you’re drinking.

Marian Jansen op de Haar, director of wine, has developed a world class wine program with over 100 wines by the glass and an annual 90+ wine dinner where Wine Spectator wines rated 90 or better are paired with a five-course dinner. 

About two years ago when Fleming’s opened in Tucson, I (as local food media) had the pleasure of observing Ms. Haar teach her new wait staff about wines. I sat in on the training and we tasted and giggled through a variety of good wine.

I could get used to that.
